Dinner: Quick Roast Mediterranean Vegetables with Feta

Quick summery dinner tonight, simply cut a load of vegetables (tomato, onion, red pepper, courgette) and pluced them on a baking tray with some olive oil and grilled for 20 minutes turning every five. Then added crumbled feta and some lemon juice and grilled again until the feta was melted. Delicious!

  2. Hi Kacy - thanks for being my first commenter! You'd call them a zucchini (if you are from the USofA as I am guessing) - they are one of my cooking staples, I put them in everything, and love them roasted and then left to cool and added to a cold bean salad.

    The are super low carb too ;)

  3. Yep, I'm from Dallas. In Texas, we call them cactus rods. Just kidding, we call them zucchini. I use yellow squash in almost everything. I've lost 11 pounds so far on the 4HB diet.

  4. Lol - got me there. Congrats on the 11 pounds - I still can't really believe how easy I find this 'diet' - and I feel so much better for not eating bread and pasta, even on my off day.
